RAW Protein Powered Oatmeal Pancakes
Ingredients:
1 c steel cut oats, dry, ground in food processor or blender
1 1/2 c water
2 eggs
1/2 c plain Greek yogurt or cottage cheese
1/4 c unsweetened applesauce
1/2 t baking soda
1 T cinnamon
1 T ground flax seed
2 scoops of Gruppo RAW
1 t vanilla extract

Directions: Heat non-stick frying pan on low to medium heat. Mix all dry ingredients together in a bowl. One by one, add the wet ingredients, starting with water, then eggs, etc. and mix until thick batter. Ladle mixture onto hot pan. Flip pancake when you see lots of bubbles forming in middle of pancake (approximately 2-3 minutes). Cook another 1 minute or till lightly browned. Serve with maple syrup, applesauce or fruit. Makes approximately 8 pancakes.
